I've had my New Braunfels Silver Smoker for 11 or 12 years, and never knew I could do anything to improve it, but then I found this forum.  I've made several modifications, over the past few months, and now it's better than ever.  The first things I did was extended the smoke stack down to grate level, installed a new thermometer at grate level, and made the hole between the firebox and chamber smaller.  Next, I got a charcoal basket, which really helped out.  A couple days ago, I got some fire bricks, and put them across the bottom of the chamber. I just fired it up, not too long ago, and temps are holding steady all the way across.  Thanks to everyone who has put suggestions on how to modify an offset. is reader supported and as an Amazon Associate, we may earn commissions from qualifying purchases.
