Made some chicken al pastor tacos last light.

Got a new vertical skewer pan and had to try it out. I love al pastor, so smoked some boneless chicken thighs on the CG Gravilty using it, with a marinade of:
1 1/2 oz Achiote Paste
2 Tbsp Ancho Chile Powder
1 Tbsp Kosher Salt
2 tsp Garlic Powder
2 tsp Dried Oregano
2 tsp Ground Cumin
1/4 tsp Ground Cloves
1/2 C Orange Juice
1/4 C Lime Juice
1/4 C White Vinegar
1 tsp Chipotle Powder

Let it marinate in the fridge for at least three hours, then stacked it high on the skewer pan, poured the marinade over it, and capped it with a slice of fresh pineapple.

Let it go on the Gravity for about 3.5-4 hours at 275, basting the marinade over it every half hour. Pulled it off when it hit 170° internal, sliced it up vertically on the skewer and made some tacos with it. Unfortunately didn't get any pics during the process as I was still technically "working" and was rushed doing this in between meetings, but got some good shots of the end result. They were really good, but I think next time after slicing, I may give the sliced pieces a sear on the griddle to get some crispy bits....those are my favorite parts of chicken al pastor which I didn't get enough of this time.

Looks delicious. That’s a solid marinade recipe for Al Pastor. The marinade time for the chicken was good but for pork I’d go overnight or all day.

Nice work.

That’s really close to the marinade I use, have always done with pork butts in a Dutch oven. But you inspire me to try with chicken.

They were actually the plan for tomorrow but weather seems to not want to cooperate. We just had a series of severe storms roll through this afternoon, supposed to be the story for tomorrow as well. Either way, I have a fence to repair now. Oof.
