My girlfriend and I went shopping yesterday and grabbed our usual staples along with lots of butts, ribs, chuckies, and a corned beef. I soaked it in water for 2-3 hours, changing the water 3-4 times. Seasoned it up with POG, and coriander. Tossed it on the MES about 11 am at 275 with some hickory and apple till IT was 202. Sliced it up and made some hot pastrami and Swiss sammiches for diner. IT was damn good. Just threw a butt on the smoker for dinner tonight.

Awesome looking pastrami! I like using the Grobbels brand when I want a quick pastrami fix! Nice nob!

Looks great. Grobbel's was my go-to brand for years and is top notch. Then.... Sam's replaced them with their Members Mark brand. I have a sneaking suspicion they are Grobbel's with a different packaging, if not they are close to that level of quality.

I do a pressure finish on mine, for added tenderness and for the broth, but a deli style steam finish is really good too.

I took some to work. I threw some Swiss on it, tossed it in the toaster oven, toasted some buns and put some spicy brown mustard on it and shared with 3 guys. They asked me when I’m making more.

Something else to add to my list that I have going in my phone to try. My husband is Irish and I make an Irish sandwich a couple times a year. Now I am wondering what the cabbage would taste like smoked 8')
My grocery budget needs more money
