Well I finally made up a batch of venison polish sausage. It was just a five pound batch, but with the equipment i was using, it was enough. First time using a grinder/stuffer run off of a drill. Kinda weird to work with. After putting them away in the fridge,I realized I forgot to add the powdered milk. What will that affect? The taste is quite good, maybe a touch salty. I used tender quick, so that may be the cause of the salty taste. I need to work on my hanging skills also. They are pretty bland looking where a couple were touching. All in all though I'm calling it a success, except for forgetting the powdered milk. Thanks for all the help and encouragement.

Might not need the powdered milk , just depends . I always use it , for my taste . Helps the texture and holds moisture . The sausage looks good , how was the texture ?

Funny to me ,,, only because you sounds surprised ,,, " seems pretty good " Been there ,,, after being on here and learning and listening , it's really gets easy after awhile . I made 3lbs of breakfast sausage , and 3 lbs of polish today .
I can't bring myself to buy it any more .
I think what you made looks great , and you're on the way to making some great sausage . See how it is , and next time remember the nfdm so you know the difference .

KB, I use pork butt for my sausage and don't use NFDM or soy protein and get juicy sausage.Yours will be fine.

I used four pounds venison to one pound pork fat( butt trimmings). Seems to have worked out, just kinda ticks me off after having to fight Christmas shoppers to find the powdered milk!

KB, I go 3.5 pounds venison to 1.5 pound pork butt and no filler and get juicy sausages ! Stock up before the holidays to avoid the crowds ! :) : :);)
