Im trying to find the best online source for the following equipment:

element with temp controller

thermometer

meat probe

I also need to find some racks that are food rated. looking for 18" x 18" racks

I don't think you'll find an assembly although the Brinkman electric conversion kit at Amazon.com may help

Usually comes with a digital unit. Although if for a specific piece of gear, I would check with that manufacture

You can do either expanded metal or some use the racks from the roll around carts. I have been known to use the carts as well as just the grates out of a reefer. Depends upon the usage.
 
I'm doing a build with an old food warmer; couldn't ID the brand so have been hunting for replacement parts.  I go onto the large appliance part websites, find what I want then go on eBay and buy it for a quarter of the price.  Pretty good luck so far.

just called around in my area to get pricing on expanded metal. 9g 3/4" opening, 12 sheets of 2'x2'. over 200$!!!!! No way... I could just buy a smoker for that... wow...
