I'll be short and sweet.  Can anyone recommend a good smoker builder in New jersey?

Good luck with that. There are a ton of Fabrication Shop and welders that could make anything from a set of plans but a Dedicated and Specialized Pit Maker in NJ? I doubt it is popular enough. I ran a search and found Nada...JJ

Believe me, I ran a good search also.  I thought I would give it a try here.  I'm gonna create a thread on this next question but since I am already corresponding with you, I'll ask here,  Hope you don't mind.

I need a smoker for making beef jerky.  I just saw a cool accessory refereed to as a jerky rack from camp chef.  From what I read, It seems like this rack will only work with a Camp Chef smoker.  Do you know of any generic jerky rack products?  This will definitely help me .

Any help is greatly appreciated.  Thanks.

That will fit anything that is 24 wide by however deep it is. Another option...Search Stacking Cooling Racks. Not as big but will work. Pampered Chef has a 10 X 18 that you can stack as many as you want, though I think most are similar...JJ

Well, after sending you the PM yesterday I called Craig from Bell Fab and he convinced me to get a vertical  offset smoker which is what I already have.  The one Craig mentioned is much larger of course.  I really wanted something that could fit a small pig too but I think the vertical smoker he mentioned with extra trays will work for jerky and that's my primary need.  Plus I think the new vertical smoker will satisfy every other smoking need I may come up with other than a full pig.  He and I haven't totally designed it yet so I am bring up the pig to him next time I speak to him.  There is always the option of a combination of a 36" horizontal with a vertical on the side.  Hopefully, that won't exploit the price tag to much.  His prices are so reasonable, I should be fine.

We're just trying to decide how big.  Right now its 24 x 20 x 48.  The next size jump is 30 x 24 X 48.  Not sure if that is to big or not.  30 x 24 X 48 would be great for making Jerky which will be my primary use.  I also think it might be over kill if I want to cook 1 Fattie!  Also Craig from Bell fab thinks the racks might be to big to work with..  Still thinking.  Either way, I should have it by Christmas.

Let me say, look no further.  After you talk to Craig for a few minutes you know you have someone that loves what they do.  After hearing from everyone out here on SMF you know he makes a good product.  I did a lot of research and price comparisons and no one can touch his prices.  He is very accommodating.  He will add anything you want to it too.  I ordered mine a few weeks ago.  Craig told me in advance he couldn't start working on it for 4-5 weeks so I don't have it yet.  I asked Craig to send me pictures of the build which I will post.  The only thing odd to me was that Craig does not supply thermostats.  He puts in holes but I have to buy the thermostats.

To answer your question about shipping, I will let you know when I know.  right now Craig is guessing between $250 - $300.

The shipping from OK to SC was about $225.00. It doesn't really matter who the fabricator is, the freight is always an add. So, why not go with Craig Bell and get something that you will really enjoy using? Probably the best product out there for his price.

I couldn't agree more about price to quality.  Look at his web site.  Everything looks very impressive and I'm sure I will get many years of great BBQ from mine once I have it.
