Loaded Baked Potato Soup and grill cheese sandwiches...

South Louisiana-Yes, it is HOT
Had some bacon, couple 1/2 filled tubs of sour cream, some cheddar cheese, potatoes, and milk, and cheese slices in the firehouse fridge that needed to be used up. Time for a batch of loaded baked potato soup.

crisped up ~1.5# of bacon into lardoons...

Then caramelized some onion...

Added flour to make a white roux, then started adding chicken stock...

Made the grilled cheese sandwiches..

Checked the potatoes, almost done. Break out the immersion blender and smooth out the potatoes some, leaving some chunks. Add the green onion, 1/2 the bacon, 1# of cheddar cheese, about 1# of sour cream, stir that in and Soup is ON!!!

That looks great. Soup and grilled cheese is a regular here at the Brazzerie.
 
Nothing beats a good bowl of soup and a sandwich to go with it. Looks mighty delicious!

Thanks old sarge. It it was good. I left all the bacon fat inda pot.
Man does that look D licious. Grill cheese is a favorite of mine for sure.
Thanks dcecil, you ever make grilled cheese in the oven? Works fairly well when you have to to a bunch all at one time.
 
Soup and sammies are always a favorite around here. I've never tried the potato soup before. Since I have most of the ingredients hanging around the house may have to give it a shot on Monday when the weekend shift is done.

Thanks dcecil, you ever make grilled cheese in the oven? Works fairly well when you have to to a bunch all at one time.
I have not tried cooking them in the oven, gonna have to give that a try.

Grilled Cheese Sammies go down easier than any other.
Used to handle 3 of them---Only 2 now.
Your's look perfect---I don't like them burnt or too Dark!!

I have not tried cooking them in the oven, gonna have to give that a try.
Place the bread on cookie sheets, 2 slices per sandwich. Two pats of thin sliced butter on each piece of bread, on top side only. Flip the bread to put the butter on the bottom touching the pan. 1 slice of cheese per slice of bread. Bake in 400* oven for ~8 minutes, then check the bread for toastiness....lift a piece and see if it is brown enough. If not go another 2 minutes until done to your likeness. flip cheese to cheese and on a plate..done.
