Alright fired up the Scottsdale Santa Maria grill with some oak wood, slapped on two fat Tri-Tips and grilling them up as we speak... a few progress pics as we go.

Good lil Sunday Family dinner in the making.

Is it my eyes or the photo but does your grill have a serious incline to the left?

Just had my first tri-tip a month ago courtesy of the first reply to your thread, bmudd14474 bmudd14474 .
I picked up a 4 pack bag at Costco (Orlando Business Center) and brought a couple to the So FL Gathering in December.
I wasn't sure how to prep so I got Brian to walk me through the process. Pretty easy once one sees it done.

Just looked at the pic, it just looked like its on an incline, must be the angle of my phone, but no its level on that part of patio, and the cooker is sitting level.

Just to double check how level it is, tossed a level on it. :)

And once you get a good rub on the Tri-Tip and learn a few tricks cooking them they are great. Tri-Tips are regular thing here in CA. Traditional California style is SPG type rub, oak wood, on a santa maria style grill, cooked to med rare. But we do them several ways out here. Makes for good sandwiches the next day as well.

Alright.... its done.... Sorry, had to eat before final posts.

Here they are before slicing them all up.

Had some mashed potatos, and some green beans with it.

Have (1) full tritip left for left overs, and will have some Tri-Tip sandwiches on sourdough tomorrow.
