so far i have only done 225 degrees for cooks (except chicken 275-300) and the food is fantastic. but i've been watching pit masters and have seen an array of different temps mentioned. is 225 still the standard?

what are your thoughts on cooking temp?
 
I use a horizontal offset, so I range between 200 to 260 on most smokes.

Average is probably around 230 to 240.  No prob for me.

Only time I drop the temps a bit might be for a chuckie or a brisket.  Probably no need, but I do it.
