yesterday i tried Leggs Italian sausage seasoning for the 1st time , really good seasoning other than being a tad to salty for my taste . i will be using it again !!!

Try making your own seasoning mix and just back off a little on the salt. You need some salt to help the sausage "bind" but not as much as most recipes call for.
 
Did you use the amount called for? Most seasonings you have to add extra but Leggs I follow their directions. I use the breakfast one. Last time tried to add extra for more sage flavor but came out over seasoned. Next time just add more sage.
 
i used .32 oz per lb. as a calculation, being that an 8 oz package makes 25 lbs of sausage

From there you can adjust salt, all my recipes are 1.5% salt including cure #1.

I ordered this for the recipes. Looks like some good recipes but every recipe with cure #1 uses pickling salt. I've never seen a cured meat recipe that uses pickling salt.
