Leggs Old plantation mix how much?

I'm trying to figure out how much zesty Italian sausage mix I need for 5 lbs of meat.
Its a 12oz bag that makes up to 25lbs of meat.

I added 5 tablespoons and it just does not seem like its enough?

I'm gonna fry up a patty and see who it tastes..

Anyone have a idea?

Just tired some and its pretty good, so I'm gonn ago with what I have posted above.
I am gonna add some red pepper flakes to half the batch and see how that works out.

I would say 2.5 ounces by weight

I agree with Sonny. If you do the math 5lbs should require about 2.5 oz by weight, or about 4.5 tablespoons.

I went with 7tbsp to 6lb of meat..
Turned out real good.
