Sometimes the best thing about BBQ is the leftovers!

I always look forward to Brisket Chili almost as much as the Brisket itself.

This past weekend I smoked a Pork Belly and last night we had the best BLT's I have ever had.

What are some of your leftover favorites?
 
Also love brisket chili! I'll also do brisket fried rice once in awhile.

For my pulled/shredded meats, I'll do tacos or throw them in a grilled cheese for the best melts ever.

You're so right, the best part of BBQ is the leftovers and the versality of it. Possibilities are endless!
 
I usually use left over meats in enchiladas. Red sauce for red meat, green sauce for white meat. Or I just snack on it til it's gone.
 
prime rib the next morning with eggs.

cold fried chicken

a cold pizza breakfast

about any soup is better after a day or two

i even enjoy fried fish from night before if you dont put it in fridge(stays crispy if you dont)
 
Love taking trimmings from Smoked Pork Chops and making Fried Rice. The smoke flavor add such a pleasant addition to the rich and salty profile of fried rice.

My second favorite is using leftover smoked foods in omelets, so many different options. My personal favorite is my pastrami with homemade kraut in an omelet with Swiss cheese and a bit of thousand island dressing or mustard served with rye toast or pumpernickel toast.
