One of my favorite things to do it use smoked foods as an ingredient in another dish. The last packer I cooked, we ate 11 meals from - none of them the same. I mean a BBQ plate, Pulled Pork or Beef Samich, etc is fantastic but using the leftovers in tacos, nachos, veggie soup, beef and noodles, and on and on is great, too.

For example, a while back I smoked a cpl chickens and after a great BBQ meal we pulled the bits and pieces off the leftover carcasses (which are in the freezer to make stock from) and SWMBO made a chicken pot pie filling with the leftover smoked chicken. We spooned it onto biscuits (I wish I could say they were homemade but they were from a can). This was a great meal!

yeah best thing to do is use left over smoked stuff, I made enchiladas with PP left overs....come nov i'm going to make PP and use left overs for a FATTY :yahoo: ....just need to think of what else to use with it....
 
I make pulled brisket tacos, pulled pork and brisket taquitos...also smoked chicken tacos and taquitos..enchiladas..i also use pulled pork as a machaca..basically just pulled pork in a pan with onions, chili's, and tomatoes and a few eggs scrambled into it...breakfast taco or burrito time. Haha. My list goes on.
