I was telling someone earlier today about making Mexican dishes using cheese shells to replace tortillas since my wife and I follow a keto diet. We talked about it so much it made me crave some lol!! So here is supper....... Cheddar shell served tostada style with smoked chicken fajitas. Fajita mix was just grilled chicken breast, poblano peppers, onion, cilantro and spices sauteed in avocado oil. Served with a side of guacamole salsa and garnished with jalapeno aoili. This will be something I make MANY more times!!

That looks really good! Great job. I tried the Keto diet for a few weeks last year. Couldn't hack it, so kudos to you and your wife.

Have you ever tried draping the cheese shells over a dowel or other thin object while they are still warm from the oven? You could form the traditional taco shell shape that way.
 
Just had something similar, although with the traditional tostada shells, just a few days ago. Any time we have leftover chicken or turkey breast, we have this. Ours usually has a tomato salsa in addition to the guacamole. We also use a LOT of lettuce and also put lots of black beans on it. Franks hot sauce adds a little heat, if you want that.

I've done it on the back of a flipped over muffin pan to form a cup .

I have not done the traditional shell yet and thanks for the idea of how to do so. Love the bowl idea as well , will be doing taco salads in larger bowls using this concept! Thanks guys

There was a phase when I just wanted to make tortilla bread bowl salads for something somewhat healthy. The bowls made on the back of muffin pans were small for my appetite.

I thought about buying those tortilla bowl forms, I kinda forgot about them but maybe I’ll order them soon.

I do like the cheese shells and tried the keto diet, couldn’t stick to it because I missed beer lol....oh, you could also spread a bunch of shredded cheese on a 9x13 pan and bake it, then you could break it apart for keto tortilla chips if you haven’t tried that already.
