Left over turkey legs?

Last night I smoked six turkey legs. Was supposed to be for supper, but with the wind and snow my stick burner wasn't cooperating. The wind was actually sucking the heat out the firebox. Once turned, it worked fine. Anyway, what's you favorite way to use smoked turkey legs? I'm fine with eating them as they are, but thought maybe there were some other good ways to use them. What do ya got?
 
As most know turkey legs can be a PITA with the many little sliver bones and gristle that is intermixed with the meat. Excellent meat, but can be a bit time consuming when deboning for leftovers.

Everything Chile said. But here are a couple more:

Turkey Enchiladas (with cream cheese and green Chile's, YUM!) or as tacos/burrito filling
Turkey vegetable noodle soup
Stir fry/Mongolian bbq style with veggies and noodles

Man most of the guys have it covered, here's my 2 cents:

  • Turkey Mac'n Cheese
  • Turkey Cheese and Broccoli
  • BBQ Turkey and Cheddar Tortilla Wraps (put meat & shredded cheese in tortilla and warm up in microwave, add bbq sauce, wrap and eat)
  • Turkey Muffaletta (olive tapenade or olive salad on a nice thick fluffy roll with some mustard and provolone cheese) Kinda like this:
 
Smoked turkey sandwiches with melted cheese, lettuce, tomato, and mustard or honey mustard my go to. Simple but good
 
Well it sure sounds like you have plenty of choices!

Took the easy way out and make turkey salad. Still have a bunch left.

Unfortunately for us - lucky for the pooch. Nobody in our house likes turkey legs since my dad past away. So we just pick the meat out and give it to skidmark. He loves it.
