Lamb and Beef Gyros - Vertical rotisserie

This time I tried a little different way of marinading it using a Greek yogurt and tomato paste marinade with a bunch of spices. This sat in the fridge for three days.

The last few times I have used a sharp knife and a paper plate to trim the gyro bitching and complaining to myself the whole time. Now I have moved on to a proper cordless trimmer and a catch pan.

The smell was so good I was sure this would be a success.

As it cooks, you turn down the burners, stop the rotation and trim away. Rotate 90* and repeat. Turn the burners up and continue.

All trimmed up.

All the veggies were used up. I will get more tomorrow. It's a meat and tzatziki sauce only one for tonight.

There would have been more meat on that final plate but I was sampling it as I started trimming off the cooked bits. I could not help but to continue to keep eating more and more as it cooked out.

The marinate I used made this so much tastier than my previous gyro cooks. I will post the marinade soon if anyone wants to attempt it.
 
That looks amazing! Of course your vertical rotisserie is really cool as well!
We don't know if we like lamb but a local grocery store recently had boneless leg of lamb so I told my wife to pick one up... we're gonna try it. Any tips and pointers are welcome... total newbie in this case.

Leg of lamb can be a little gamey tasting if you have never had it before or cook it like beef or chicken. I like it best in the gyro or a kebab form.

I wasn't sure about this marinade but it really turned out great. I kept sampling it as I was trimming the cooked meat.

The marinade:
1 large red onion (blended then squeeze out and use the juice, 1/4 of the onion pieces)
10 Oz plain Greek yogurt
10 Oz half and half
8 Oz can tomato sauce
3 Tbsp olive oil
4 garlic cloves minced
3 Tbsp oregano
1 Tbsp salt
1 Tbsp chili powder
2 Tbsp pepper

Marinade for 24 to 72 hours (longer is better)

I have made my own tzatziki sauce before but I ended up buying some pre-made at Walmart and it actually taste great.

I made a couple of gyro burritos since then. I kind of like it this way more than using flat bread.

I only use Sonora Style tortillas these days. They are so much better that I will hold out if I can't get them. I use to go to a Mexican grocery store but luckily now my Super Walmart carries them so it saves a trip.

Looks fantastic and rotisserie piques my interest, but I imagine the cost would scare me back and it would end up in the twice a year closet

Here is one for around $175. I use mine about 4 times per year but when I do it is worth posting here. That might seem like a lot for a seldom used item but for me it is worth it every time I use it.
