It's been a few months and I decided it was about time to smoke some meat. I'm working from home today so I put a 4lb pork butt on at 9am. Rubbed down & ready to go. 2 hours in. Smoker is going between 250 & 275 today. It's electric so it has a mind of its own. Think it should be at 203 around 4 or 5 but we shall see.
