Smoking a rack of BB ribs in the MAK, and filled up the empty space on the rack with some bacon, and a brisket trim burger. The burger made for an awesome lunch topped with cheddar, bacon, avocado, and pickled jalapeños. Wife opted for a BLT, for which the double smoked bacon was perfect. Ribs for dinner tonight.

About 7 hours in, and ready to pull at 195°F. First 2 hours at grate level temp of 200°F and then up to 250°F for the remainder. Sauced and wrapped for a 45 minute rest, and then it'll be chow time.

Forgot to add, the seasoning was simply S&P, and a dusting of granulated onion and garlic. I'm kinda migrating towards keeping it simple, and definitely using less commercial rubs. The price has gotten completely out of hand, considering it's primarily salt and sugar, which are the cheapest ingredients in it.
