Really thick Choice grade brisket from Sam's. Simple S/P rub cooked over oak and hickory. Cooling now and about to be wrapped for a long rest/hold.

Thanks! Sorry, no sliced shots. My task was brisket and chicken for the Labor Day party. Chicken took longer than planned so I was a little rushed when I got to the party. Forty hungry Seniors from my Sunday school class. Didn't have time to stop and snap pix. It was one of my better briskets. Nearly 16hr hold. Moist, tender, fully rendered fat, good bark and smoke ring, not a crumb left over!
