my best tenderloin so far. Not super happy with the color but everything else was spot on. Started my fire with alder then moved to using cherry. Injection was butter, honey, little apple juice and little hot sauce. Highly recommended! Tossed my meats on the grates then stared my fire and brought it up to 225 then tossed on little oak which brought it up to 250 last 15 minutes or so. Only took 1.5 hours and pulled ribs and thought pork wasn’t done and figure I’d put in the probe and it would need more time but no, 140 degrees

And the ribs I marinated them in bbq suace and honey. Got about a pound left for a during the week smoke session
 
I need to try short ribs low and slow. I have been doing the Korean ribs on a high heat with a marinade of Korean BBQ sauce, but a little tough and very fatty.
 
I have been meaning to try short ribs for quite awhile. Our local Save a Lot has them all the time. They look so well marbled I’d think they are juicy. Your cook looks great man! What smoker is that your running?
 
The beef ribs are one of my favorites, they can be really fatty. I’m going to look for some leaner ones next time. The pit is all custom made. Even the rear axle under the fire box. Hubs custom made on the lathe and mill all stainless. Besides the hubs. I got really good deals on everything thing. Like the 1/8” sheets of 304 were a buck 1.86 per pound. It took 2 4x10’s almost.
