Hi folks, I raise pigs and chickens, and make sausage and smoked hams.
I want to make bacon and I only have Prague Powder #2.
Can I use this to make bacon and if so, do I need to adjust the recipe?
Does anyone have recipes that use #2?

The nitrate, in cure #2, has been banned from commercial processors to use, years ago, when making bacon.....     

Cure #2 is used in meats that are not cooked...  dry cured, dry aged etc..
