I have so many sausage kits i need to use up.

If you have not tried any of the kits you should. Lots of great kits out there.

This kit is from Con Yeager Spice located in Zelienople, PA.  http://www.conyeagerspice.com/

You can find CY kits at Gander Mountain locations or online. I buy my kits from a butcher friend back up in PA.

I'm using regular cure#1 instead of the CY cure packet. Mix the cure with the distilled water, stir to dissolve.

Next add 5.5 T of the Kolbassi mix to the cure water.

5 lbs of 80/20 GB ready to be mixed.

Use the hook. The paddle just makes the meat ball up in the middle.

Oh yeah. Not using the collagen casings that comes with the kit.

Using natural hog casings.

Nice! I've been considering some of their kits...I used to live in Zelie! I just checked Gander Mountain online and they don't have them. I did notice a while back they have dropped several items.

Everytime i get my MF Smoker out it rains

Looks great, NEPAS. Found the CY kits at our local Trader Horn about a year and a half ago and have been using them ever since.
 
Finally got the kolbassi done and cooling.

Look great .These are hot smoked ? Normally just eaten as is not reheated? Don't know them by that name down here might be similiar to a thing the Croatian butchers do.Chasbai ?

keep the stuffer busy  I love to see your work.
 
Taste is pretty good, has just a slight bite. What i will do next time is add a tad of mustard, cayenne.
 
Tasted this morning before vac sealing.

Has a slight tang, kinda sweet/warm taste. Its pretty good.
