Well well well....looks like our friend Crazymoon has a hit of a recipe here!! Got them smoked today and they are absolutely extraordinary. I only did a 3# batch not knowing how they would come out but now I'm wishing I had done a 30# batch :-) I did make a few minor changes to his recipe, but overall it's pretty much how he posted it. Added a bit more black pepper, a bit more garlic, and some onion powder.

Off the smoker, out of the ice bath, and the links separated. The color on these is perfect. Exactly what I anticipated smoked kielbasa to look like

Cross section. Not much in the way of texture as far as the ground meat goes, but it sure is good!!

This is an out-of-the-park, grand slam home run recipe!! If you've been waffling about making it, time to get off the fence. It's worth the time!!

Robert, Your sausage looks way better than mine ! Don't thank me as it is a Stanley Mariansky with your tweeks !! I hope the boys at the pub liked it.

I don't know about that but thank you. It was the appearance of yours that inspired me to make it. You still get full credit. I'm just the pupil following the lead of the teacher.

Again I have to respectfully disagree. I have never heard of Stanley Mariansky and would have never thought to seek him out, thus I'd have never made this sausage if it hadn't been for you posting it. IMHO, you deserve the thanks....at least from my perspective. Insofar as the guys at the pub, they never got a chance. Didn't take but one link and my favorite Cajun server lady pretty much destroyed it. She's gotten accustomed to me bringing stuff I've made following the lead of Indaswamp, who is pure Cajun (or at least I assume so) and I've made a ton of his sausages. She took a bit of this and said "It ain't Cajun but it is incredible", then proceeded to eat the bulk of what I brought. That's fine though. Free sausage = free beer :-) The guys did get a couple of bites and they were all in awe. We are doing a full-blown sausage tasting this Sunday at the pub (lots of free beer!!) and your Kielbasa will be showcased as one of the headliners. Seriously, this sausage is truly fantastic and I WILL be making a much larger batch.....as soon as my new smoker gets here.

Here are some of the horrors you'll have to endure in Central Texas though. These were taken yesterday while the wife and I were having dinner on the patio.

This is only three of them but we have seen as many as eight come through at the same time. There is an abundance of wildlife around here and we love sitting and watching it. Having been here just over four years now the animals that frequently come by know we aren't going to bother them AND there is an abundant food supply with all of the bird feeders we have in the back yard. The turkeys will come over the fence and eat their fill with us sitting literally 20 feet away. It kinda drives the dog nuts though but a couple of those turkeys look like they weight 60 to 80 pounds so the dog leaves them alone as they are a LOT bigger than she is :-)

The deer around here are like rats. They are everywhere, quite destructive, and an overall nuisance. You can take as many of those as you'd like. Ditto that with the wild boar. They are even more destructive than the deer. Have you ever seen a car after it hits a 600# pig at 70 mph? Holy smoke it's a mess!! My only request is please don't mess with the turkeys. They have kinda become family :-) We love sitting around and watching them play in the yard, chase off the squirrels, and eat their fill while we also eat dinner. Their antics when in a group can actually be quite entertaining.

I appreciate watching the turkeys, but I also enjoy the hunt of them as well. You talk about the damage that hogs do, I know farmers with silage piles up here that feel the same way with turkeys. Those claws will destroy a huge silage tarp in no time flat....but they are definitely entertaining to watch when they are just doing their thing. How much land you got down there? I've been thinking about adding an annual hog hunt with my son once he's done with college in a year, but it sounds like that's getting commercialized and expensive now.
