Thanks. I forgot to prick for air pockets, but the flavor turned out good. I'm trying to decide what I'm going to make next. Maybe andouille

We told you that this stuff was addictive!

Yessir. I made snack sticks Friday with natural casings. They are a PITA, but they are much better than the collagen.

Now I just need to figure out what to make next. Andouille, Italian sausage..... Any other suggestions?

Depends upon your tastes.

You've done natural casing sausage, both styles of snack sticks, so maybe it's time for salami, bologna, summer sausage, etc... big fat casings!

I really liked the kielbasa, I'm thinking maybe andouille. I've been meaning to make some jambolaya, abs that would go perfect in that.

I also have some snack stick seasoning coming from a butcher shop near my hometown. Best snack sticks I've ever had.

But I looked into the UMAI dry casings, that also looks intriguing.

Hot Italian is a regular for us and is a favorite of the Mrs. Andouille is my personal favorite and is good both for snacking and Red Beans & Rice. I'm stuck on the NOLA recipe....

Do you smoke your Italian sausage? The only Italian sausage I've ever had was fresh sausage.

Abs what is the NOLA recipe?
