Flew this one through the smoker last weekend; my first attempt at whole-bird smoke. Happy with the result...confirmed tenfold by the looks on people's faces after their first bite!

- 12-hr slaughterhouse brine (slightly modified)

- Injected 2 hrs before smoking

    2 C apple cider

   1/4 Jim Beam

   2 tsp garlic powder
   2 tsp celery seed

   3 tbsp butter
 


- Rubbed 

  Garlic infused Extra Virgin Olive Oil

  Cajun Shake seasoning

  
Into the smoker using Apple & Maple


After a 5 hr low & slow smoke, spritzed w/ Apple Juice at the 3 hr point
