So I bought 10ea 24oz bottles of Ketchup on sale ($1 each) and decided to do up a batch of Jeff's BBQ sauce x 15 with a few mods. I didn't take a picture of the ingredients nor will I list all the ingredients as you have to buy the recipe. Believe me it's worth it. For those that have the recipe this is what I did... Turned out great. I put about double the minced garlic then was listed, I cut out the cayenne pepper completely as well as cut back on the black pepper just a little... The reason for this is I added about 1 1/2 pints of my Fatali hot sauce into the mix... This brought all the heat I could ever hope for. It’s one of those internal heats that you don't know hit you until you start to feel a bead of sweat trickle down from your forehead...

The yellow peppers below are the very hot but super flavorful pepper called the "Fatali"

48 ea 1/2 pints canned and ready to distrubute to friends and family...

The jars with the XXX are the even hoter than described above. It took about 3 hours to can all of this and so the final 2 batches that I canned (had been sitting on simmer for 2 + hours) so it was concentrated down (thicker) and I added even more garlic and more Fatali hot sauce... This is for all my friends that like it real HOT...

awesome looking sauce. I checked out your link and may to have a go at this. I see your fatali sauce was done in a water bath....was this one water bath process as well?? Great job

Thanks Willie! I made the Hot sauce a couple weeks back and yes it was water bathed as well. The hot sauce on needed to be water bathed 20 minutes and the BBQ sauce I read needed a 30 minute bath. Really getting into canning lately... I'm just like my dad... Thanks, Smokin - K
 
 
P.S. Also note that I cut out the Tabasco sauce all together as well. Just had a report back from a co-worker.... She said she got all the way through her pulled pork sandwich last night and then noticed the heat... I guess its subtle... I must have given her the safe for children version. LOL! K
