  Hello all, have been subscribing to newsletter for a year or so and thought I would join the forum for answers to questions.  I live in central lower Michigan and have a upright gas smoker and a bullet style charcoal smoker with a few mods from other forums. I have a pit IQ on the bullet and love it.

  Now to the question, I have smoked a few things over the past couple years including a few pork butts, bone in.  Today I picked up a pair for this week and the butcher told me to "make sure I remove the gland at the end of the bone".  Have never done this and I am puzzled.  He said it is like a big gelatinas sack.  Has anyone done this or heard of this?

I've never removed the gland prior to smoking but usually find it when I'm pulling. But here is something that might help:
