Well it’s working, so the wheelhouse should be turning on thoughts for the next cook. What a great kitchen tool.
 
I had a TP-20 that tested good at boiling and ice water . Was having issues with readings . Had the SV running one day , so I checked it . 40 degrees off .
Makes sense to check intermediate temps . That's what you need to know .

I'm in the same boat... Mines been in the closet for a few years... Only used it a couple of times then... Wasn't impressed...

Got it out this past wknd and did a 22 hr Standing Rib Roast... And I just found the proper searing tool.... The lid off my dutch oven flipped upside down and set on top of the grate on my gas stove ... The lid on the underneath side is concaved (bowl shape) so all the juices/oils flow back to center... As hot as it will get... Sliced the SV'd roast into thick steaks (3)... Seasoned with Tatonka Dust.... Slicing gives more sides for searing...

I was much better impressed this time...
