Just got our first smoker. CharGriller Texas Trio. Side box smoker. Smoking our first baby backs today. Looking for some tips! Got a good pile of coals going in the box, was gonna put apple wood chunks on top. Not sure how many and if I need to just lay the ribs meat side down and rotate? use foil? I rubbed with Kings mustard based sauce last night and dusted with a rib rub. Do y’all use a pan of water underneath the meat? Any advice would be great! Thanks y’all!
 
Mrpackfan, welcome to SMF! Glad you're here with the new toy and putting it to work. I'm not an offset guy so not much help. Plus, the ribs are probably long gone by now, 10+ hours after your post.

I run an Electric Smoker but if you like easy peasy ribs, look up the 3-2-1 method...and I bet SmokingAl will chime in too, he uses another method suited for people who can get a smoker up to grill temps :)
