So I have been reading on these forums for a while, been watching various smokes on YouTube, and got an Oklahoma Joe's Highland about a month ago. Did a few mods (gasket, high-temp food-grade silicone seal, and a fire-box coal basket...got it seasoned and did the inaugural BBQ a few weeks ago. That first pork loin and bone-in chicken breasts turned out amazing.

Look forward to posting some pics from upcoming BBQs and learning from all of the folks in this online community.

Thanks guys! Gave it a go today with the Oklahoma Joe’s. I just posted over in the pork forum. It was a fun day working in the backyard while tending my fire(box)!

The Highland sure has provided some good eats. Did a sweet and spicy theme today. Gotta love the 80 degree weather in November! It is why we live here. Not for the 115 degree summer days . Made a pork butt which took nine hours. Created a nice bark with a rub including chili powder and brown sugar. After resting for almost an hour the bone pulled out clean. The meat shredded easily. Also made a pan of BBQ beans with a Filipino Sweet Chili Sauce as a kicker. The drippings from the butt directly into the pan of beans added a bunch of flavor. I should have snapped some pics, too late now .

So good my seven year old daughter looked at me and said “Daddy I cannot stop eating this pulled pork.” The fam loving the chow is priceless...Getting a wood smoker was one of the best choices I have made in a while!
