Hello Wellcraft, I know this thread was started awhile back but I wanted to try and help.

Are you using the temp. gauge on the smoker? If you are your temps. are probably off. The factory smoker therms are almost always off, sometimes as much as 50 degrees. I know mine is off about 45 degrees. What you want to do is get a digital probe therm and put the probe through a potato and set it right on the grate that the ribs are on. This will give you a better temp reading. 
 
It sounds like the temp was too low & you had the ribs on for a long time so they were probably dried out.

I usually do 225-240 for about 4-4.5 hours, no foil
