I am excited to be a part of a group of grillers and smokers that have similar interests. I have always loved cooking even from as far back as my old Boy Scout days. My wife is from Brazil and we used to run a catering business that specialized in Brazilian/Southern Style foods. A few years ago, we began to have so many requests for our chimichurri sauces (that we served as a condiment) that we began retailing them. Now, we have a food production business where we retail our sauces and dry seasoning mixes.
Part of my enjoyment in cooking has been grilling and I now want to delve into the intriguing world of smoking. I'm talking about smoking everything. I just bought a Masterbuilt XL propane smoker for myself but have used my son's Masterbuilt XL smoker on many occasions. I put it together yesterday (it was very easy to do) and plan to smoke a brisket and cured pork bellies this weekend.
