So ten days ago I decided to try an experiment..I have a package of 1 inch pork chops. So I took out my maple cure and decided to make some Ham Chops..they turned out awesome.. I only grilled them next time on to the smoker..
Use Brown Sugar and some 5 spice seasoning.. they were very tender

  • 1/4 cup kosher salt
  • 2 teaspoons pink curing salt
  • 1/4 cup packed dark brown sugar

1/2 cup of powered maple
For 5 lbs of meat
