Is there a standard seasoning for them to be called Johnsonville?
 
I found several variations of the Johnsonvilles; some had caraway seeds or coriander which seemed out of place. So I McGivered my own recipe; it accents the nutmeg & ginger, which my nose & taste buds tell me are in there.

10 lbs. pork shoulder
7.5 Tbsp kosher salt
5 tsp black pepper
4 tsp freshly grated nutmeg
4 tsp dried ginger
2.5 tsp dried marjoram
1.25 tsp celery seed
cold water for mixing
29-32mm hog casings
