Just joined up. Hope to get some good ideas and maybe help someone also. I use charcoal and propane smokers. In the process of finishing my small smoke house. Will post some pics when it's up and running. Smoke anything I can. Find it to be a rewarding challenge to have people eat my food and not say a word but just eat and smile. Don't really care if it's Carolina, Kansas, Texas, Louisiana or where u cook. I use a little of them all.
