I don't think it would do the trick. A food processor with a pulse setting may be a better option.

I have one now, was wondering if anyone used it for making the jerkey chew. Don't want to break it.....Those are kind of pricey. I hope you're planning on making a ton of jerky chew with that investment. I've never seen one in action. So I can't say if it will do what your asking.
Chris
I'd be nervous that it would break the grinder due to how tough jerky is.Wonder how it would look through a grinder
That's the same one I have! Did you get the lid and bowl retinned? did you paint yours as well? I just picked it up at an auction. Works great. Bowl and lid are in decent shape, but not like yours. Any idea what you can sell it for? (just debating if it is worth getting it retinned). Any hot dog recipe tips? I plan on making those using the chopper.I don't know what type of bowl chopper you have but mine is a beast. I have never used my buffalo chopper for jerky but i have used it for cabbage, potatoes, carrots, onions and for emulsifying meat for hot dogs. I have no doubt mine would shred the jerky but I think you would have to put a substantial amount of jerky in it for it to work correctly. To little and the jerky would not get processed into a consistent product. IMHO
