doing 2 batches at 2.5 lbs ea. And some elk later.

This batch i did not smoke. Did a cure tumble for 5 mins. Then a 30 min marinade tumble.


In the dehydrator. 5 trays at 145*


Last of my elk meat.


Lost 1/4lb of trim. Bleed the strips out overnight.
