Jerked chicken thighs w/Italian sausage

Finally got some time to myself today to smoke some delicious chicken. Boneless skinless chicken thighs are without a doubt my favorite cut. Using a Caribbean Jerk rub from a local Smokehouse, I created a marinade with oil and vinegar. This is my first time doing it this way, but I think it's going to turn out great! I threw some of my homemade Italian sausage in the smoker to for the kids.
Cooking at about 275 with mesquite wood.

Cooked for about 2.5 hours.
The jerk marinade smelled really good cooking while I did some yard work.
All done
Some greens to keep it balanced.
I'll probably throttle back the seasoning next time I do this marinade. It wasn't too hot, but I felt like it overpowered the chicken. Oh well, I guess that's why it's fun to experiment.

Thanks for the points Al. I believe I read somewhere that you used to live in Michigan. Is that true?
 
Fruit salsa I've had was pineapple,mango,lime juice,red onion,red pepper and a touch of jerk seasoning dash of rum or to your preference. I have seen the pineapple grilled before as well.

Thanks Disco. My wife is a great cook and is very territorial about the meals around our house, so I have to sneak-smoke stuff when she's not home! It was fun to surprise her when she got home!
