Totally forgot to post pics of what I did mid last week. Oops Sorry.

Got a couple large sweet white onions slicing out the larger diameter center sections, about 1/2" thick. Each ring has two onion layers which were each slathered with jeff's sauce and then dusted with Jeff''s rub. They were then wrapped with two+ thin pieces of bacon. Afterwards dusted with more rub.

Onto the Weber for 1.5 - 2 hours at around 250*

Had some artichokes marinating on the side which were destined for our patio gasser grill, but since I had the Weber up and running with lots of heat still it it's belly, I just threw them on after the rings were done. Nice addition to the meal. The chokes were steamed in the morning, slit in half when cooled with it's fibers removed. Then marinated for 5-6 hours in a bath of soy sauce, olive oil, minced garlic and lemon juice. Onto the hot part of the Weber (over the coals) for 5+ minutes turning over numerous times until blackened. The artichoke dipping sauce is a simple batch of the same marinade and some mayonnaise.
