 Any one make the sausage  from Rytek Kutas book Great sausage recipes from page 178? I made a batch yesterday and was shocked by the dry amounts of spices, 1/2 c jalapeno, pwdr 1 1/4 onion pwdr, 1 c Paprika 1/4 c salt 3/8 sugar 1/4 garlic powder. Says sprinkle dry ingredients into water and add. I mixed it all up but I mixed it with about 5 cups water and added it.

 Now the question at hand, the mix has a real strong onion smell with that much powder in it, so has anyone done this recipe and how was it? I also used fresh jalapenos and cilantro and jalapeno juices from the bottled peppers. I am really hopping this wasnt a messed up recipe that got printed..
 
How many pounds is the recipe. Sounds about right for 20Lbs of meat. But for 5Lbs that's a lot. I need to get that book some day...JJ
 
It was for 8 pounds of meat and 2 pounds of cheese. I ended up with 10 pounds of meat and 1 1/2 pounds cheese.
 
 
I have seen TV Chefs make some Mex Chorizo recipes that seem like you are mixing equal parts Meat and Spice Paste. Might just be one of those. Sorry I could not be more helpful. I am interested to hear your comments on the finished product...JJ
 
Ryteks recipe's aren't the greatest.... I have made a few and I think they are more of a commercial mass production type of sausages with a lot of dry ingredient thrown in. I would use his recipes just for a base ingredients list and tweek to your liking using fresh ingredients....

Well I know that I am gonna take it for not having QView buuutttt,,  The sausage was good. Nothing outstanding by far.It is NOT hot at all, it lacks punch from the jalapenos for sure. I think if you cut the onion powder by half at least and double the jalapenos it might be better.
 
 
I'd also be curious to your results and Joe's comments. I have the book, haven't tried an exact recipe yet because I haven't purchased some of the ingredients most don't typically have on stock, yet. I would hate to waste a batch but you'll never know until you try the exact recipe. How'd yours come out?
 
ah, I posted after you two did.. 

I heard dehydrated jalapeno's give the best flavor in sausage? Thoughts? I've only had experience with my own powder and that was pretty good except I didn't get the heat I wanted from it so next time I'll double it.
 
Just a heads up your not going to get heat from jalapenos. The seeds are whats hot. If you want hot spicy sausage add cayenne pepper to liven it up....

I actually ground the entire Jalapeno, seeds and all. I think I just hit a weak batch of Jalapeno's. The powder alone had some nice sweet heat but I just didn't use enough being my first time using my own Jalapeno powder.
