Hi I am from middle Tennessee . My interest is more In the smoking of meat for longer storage that in a rack of ribs for supper . Have been totally of grid w/solar for over 20 years . That being said I don't use a freezer and have habd to can most of my meats . Have been. Corning beef for years and just recently took that to the next level and made pastrami .That's enough for now.
