I had a hankerin' for some Jamaican jerk chicken so I made some. So nice how that works. :emoji_smile_cat: :emoji_smile_cat: :emoji_yum:

I used some 8 piece cut chickens that I got from GFS and Walkers Wood original jerk paste.

I cut slits in the chicken and rubbed in the jerk paste. Smells good already....

I also used some pimento pellets I bought in a group buy on the forum. Those pellets really work well to get that traditional flavor.

I used my AMNPS pellet tube for the smoke. That smoke tube was a great purchase.

Ran Sarina, my Stump's Baby, at 300F for 45 minutes then up to 350 for last half hour to crisp up the skin. It worked quite well. I also grilled up some vegetables in my grill wok and made some jerk spiced dirty rice to go along side.

MMmm jerk, Walkers Wood is probably one of the best jerk marinades on the commercial market. Good looking bird.

Thanks. I tried a couple other jerk rubs and even made my own a few times but Walkers Wood is the best IMHO.

If you can find Grace's, thats a good one too. Used to work part time in a groc store and WW and Grace's is what all the Jamacian customers bought and recommended.
 
Walkerswoods is the best hands down. I will also rub down chicken tenders and boneless breasts and let them marinate for a few days. I then throw them on a hot grill till just done. I then fine chop them and make Jerked Chicken Salad for sandwiches.......soooo good.
 
Looks great JC! Bet those pimento pellets added some nice smoke! For commercial Walkerwood Hot is one of my favorites.

I will make a point to look for that next time. I just love jerk spice. I made some jerk spareribs a couple weeks ago.

Graces comes in both mild and hot, we always get the hot. Ive done jerk country style spares, chicken and shrimp and love it.

Nice.. I will be sure to check it out. Now that I got those pimento pellets, I feel like the flavor is right where is should be. I used to just grill my jerk chicken but now that I have a smoker that will run at 350F, I can do it in my smoker and it makes a huge difference in flavor.

The smoke just cradles the jerk spice and seems to mellow the heat just a bit.

Ive smoked the chicken before, using skinless breat and comes out tasty, should throw it on the grill for a bit of char.
