Jalapeno Popper Chicken Casserole

After scaling down Jeff's recipe cooked this up today. I was thinking about making a Mexican casserole or maybe low carb version of chicken spaghetti and had rotel on my mind so I decided to leave out the broth and add a can of well drained rotel. Also added a hand full of cilantro. Best way to shred chicken is in a stand mixer. I was using left over rotisserie chicken. Works better while chicken still warm but it worked.

I put the cheese on last and after looking at Jeff's picture realized I did it wrong so pulled everything back off best I could and redid cheese first.

Plated with some habanero sauce like it really need it. That first piece a little hard to get out but I managed it. This was spicy.

Bagged some up to take to the River Rats, that what people call us guys that hang on the river. This maybe be to spicy for them! I should of left the rotel out. Should of used a different cheese as this ended up pretty hard to cut through.
