Think I'll try Len Poli's Italian style Salami Sticks.

Will modify recipe and use all venison if i'm fortunate enough to get a deer.

If not, beef.
Can't wait to try.
 
Sounds good.. thinking you'll need a lil fat in that venison...
More than likely.

My friends in Texas make a dried venison sausage with no added fat, and it turns out like a jerky stick.

Very tasty
 
I make this recipe. Just follow like it is and you will be fine. Yeah you may need some fat
