I was tired of leftover turkey so it was time to jazz it up a bit. I made smoked turkey salad using my double-smoked ham salad recipe. The recipe is pretty simple but it tastes great. The recipe is at the bottom if interested. I also used our KitchenAid meat grinder attachment to speed up the process (in lieu of chopping it up by hand).
All the ingredients in a bowl:
All mixed up and ready for crackers or as a sandwich spread
Here is the very simple recipe:
Ingredients
3 cups ground (or finely chopped), fully cooked turkey
2 hard cooked eggs, chopped
2 tablespoons finely chopped celery
4 teaspoons sweet pickle relish
2 teaspoons finely chopped onion
1 tablespoon prepared yellow mustard
1 cup mayonnaise
Directions
Place turkey, eggs, celery, pickle relish, onion and mustard together in a bowl.
Add about ¾ of the mayo.
Mix well.
Adjust mayo to suit.
It will be dry with ¾, about right at 1 cup and creamier with more than a cup.
Refrigerate until serving time.
