Hey my name's Chris I am from Canada, Ontario and I am new to smoking. I have a Weber kettle grill which I am very fond of and have used it a couple of times now. I also have a dyna-glo vertical offset smoker which I plan on using this weekend. I seasoned it a couple of weeks ago but didn't have much time to play around with it. I am going to be cooking a pork shoulder and some sausage links but I'm pretty nervous about keeping a consistent temperature. If anyone has any tips or suggestions it would be much appreciated and thank you.
