My wife decided to hurt her back while I was making snack sticks today and I ended up taking her to Urgent Care.

I've got about 2 of the 5 pounds of sticks in the smoker but the rest I had to put back in the fridge. Will it still be safe to stuff and smoke the remainder on Saturday if I leave it in the fridge or do I need to toss the rest? I put it in to cure overnight yesterday (Monday) about 5 PM.

I used TQ (2.5 TBS for the 5 pounds) for my cure and it has a homemade teriyaki seasoning of soy, white vinegar, sugar, worcestershire sauce, onion powder, ground ginger, and garlic powder in it.

Gut tells me it is okay since it's got cure in it as well and being refrigerated. Not sure how it's going to taste after sitting that long but that's a different story.
 
It will be OK. Might have to add some water before stuffing thou. The meat might get thick.
 
Just fridge and stuff it later. only thing i see that can happen is the vinegar, it separates the fat from the meat. Try it what do ya have to loose....EH

 I didn't even notice that.     Great point.
 
Hope it all works out for you,I hope to get 5 lbs. of sticks done today before it rains to hard

If the flavor is different than expected, just tell inquiring minds that was what you were aiming for.

That's an idea lol. She's doing alright. She originally injured it about 9 months ago while she was pregnant and it's been a tweak here and there ever since.


Fresh out of the fridge. Looked and smelled fine so on to the stuffing.


Stuffed and ready for the smoke.


Connor got a little exuberant with the jerky gun on a couple and they had to be made to fit lol.


Finished product on cooling racks before I put them in the fridge.


Nice color inside and out. I'm happy with them.

Things always work out better when I have my two helpers in the kitchen, of course.

So, everything turned out good.  

Its sure nice to have helpers.  That jerky gun looks to be bigger than Conner--guess he'll just have to grow into it.  LOL
