I just finished a custom build on a reverse flow offset with warming box. I have it setup for tri-fuel gas wood and charcoal. I have baffle plates that are removable between all three chambers making it suitable for using just the drum or the warming cabinet or both at one time. The warming box is setup to hold a full size chaffing pan on each shelf, making it perfect for doing side dishes. With 6 racks in it, it puts my capacity at approximately 24 Boston butts at one time. I'm interested in getting everyone's feedback. If anyone has ever built a tri fuel. And just some overall comments on my build.
