I just got my new Inkbird 4 probe thermometer. I was curious why the preset temp for pork is 145°.

It's set to 145° because that's the safe temp to consume pork. If smoking a butt you can adjust the preset by clicking on the notepad/pencil icon on the app.
 
As was said that's the USDA safe temp for pork it was lowered a few years ago. Jakes got you covered for adjusting the preset temps if you want to
