Just opened my first Inkbird product and there is no reading from the probes.

Welcome to SMF.

If I remember correctly, the cables take some force to snap in. That may fix your problem.
 
Make sure your probe insert end is clean and dry and make sure there are no kinks in the cable. Good luck

Try pushing a bit harder, might work.
I'd assume, instead of you, that the thread poster might have tried this kind of technique before/after asking the internet.
